Fire Roasted Corn
makes 1 serving
Ingredients:

Fresh corn on the cob, still in its husk

Dishpan with cold water
-
Vegetable oil
Optional toppings:
-
Butter
-
Garlic butter
-
Olive oil
-
Salt
-
Ground black pepper
-
Cajun seasoning
-
Your favorite spice or seasoning mix
Instructions:

Get corn on the cob as fresh as possible (we suggest from your
own garden, a roadside stand, a farmers market, or find out when your grocery
store gets fresh produce)

Soak the corn, still in its husk, in cold water for at least 1
hour; 3 to 4 hours is even better

Just before you’re ready to roast the corn, add a little
vegetable oil to the soaking water so that it lightly coats the corn as you
remove it

Place the corn in the fire embers or on a grate over the
embers or medium coals

Turn occasionally and roast until the corn is tender, about 15
to 25 minutes

Carefully pull husks off the corn (we recommend using old oven
mitts so you don’t burn yourself)

Try the corn plain your first time – roasting it gives it a
unique flavor which many people find delicious; or use your favorite seasoning
