Foiled Nachos
makes 4 servings
Ingredients:

Heavy duty aluminum foil

Nonstick cooking spray
-
4 to 5 cups tortilla chips

1 (15 ounce) can black beans, rinsed, drained, and mashed

1 (4 ounce) can chopped green chilies
-
1 packet taco seasoning mix
-
2 small tomatoes, diced
-
2 green onions, chopped
-
2 cups shredded cheddar cheese
Instructions:

Spray a large piece of heavy duty foil with cooking spray

Spread chips on half of the foil piece, overlapping but about one layer deep

Mix beans, chilies, and 2 teaspoons of the taco seasoning mix and spoon over chips

Top with tomatoes, green onions, and cheese
-
Wrap foil around nachos, sealing tightly

Heat on a medium-hot grill, about 4 inches from the coals, for 6 to 8 minutes
