Grilled Rosemary Trout
makes 4 servings
Ingredients:

Nonstick cooking spray
-
4 pan-dressed trout, about ½ pound each

½ teaspoon salt
-
¼ teaspoon ground pepper

4 teaspoons dried rosemary

8 lemon slices
-
¼ cup olive oil
Instructions:

Heat coals to medium, and spray grill basket with nonstick cooking spray

Mix salt, pepper, and rosemary, and sprinkle evenly in the fish cavities

Place 2 lemon slices in each fish

Brush olive oil over both sides of fish
-
Close grill basket and grill 4 - 6 inches from medium coals for about 20 minutes, brushing with oil and turning frequently

Fish is done when it flakes easily
