Beef and Black Bean Stew
"Feijoada"
Brazil
makes 8 servings
Ingredients:
- 2 (15 ounce) cans black
beans, rinsed and drained
- 1 (14 1/2 ounce) can diced
tomatoes, undrained
- 1 pound beef stew meat, cut
into 1 inch cubes
- 4 slices bacon, cooked,
drained, crumbled
- 1 jalapeno, minced
- 3 cloves garlic, peeled and
minced
- 1 small onion, peeled and
minced
- 1 stalk celery, diced, leaves
included
- 2 medium carrots, diced
- 1 green bell pepper, seeded
and diced
- 1 teaspoon grated orange zest
- serve with:
steamed white rice
- garnish: 2
fresh oranges, cut into wedges
Instructions:
- Combine all ingredients in a
3 or 4 quart slow cooker.
- Cover and cook on LOW for 8
hours.
- Serve hot with steamed white
rice and garnished with fresh orange wedges.
