Shredded Cabbage Soup

makes 6 (1 1/2 cup) servings
Ingredients:
- 2 medium sweet onions, peeled
and thinly sliced
- 2 (10 1/2 ounce) cans beef
broth
- 2 1/2 cups water
- 1 small head cabbage, finely
shredded (about 5 cups)
- 2 large carrots, sliced in
1/4 inch rounds
- 2 medium potatoes, peeled and
cubed
- 1 stalk celery, diced, leaves
included
- 2 large tomatoes, diced
- 1 teaspoon salt
- 1 teaspoon ground black
pepper
- 1/2 teaspoon dill seed
- garnish:
- 6 tablespoons dairy sour
cream
- 6 fresh sprigs of dill
Instructions:
- Combine all ingredients,
except garnish, in 3 or 4 quart slow cooker.
- Cover and cook on LOW for 8
hours.
- Ladle into serving bowls and
garnish with sour cream and dill.
