Sweet Potato Bean Soup
"Dengu"
Senegal
makes 8 (1 1/2 cup) servings
Ingredients:
- 1 large onion, peeled and
diced
- 1 tablespoon peanut oil
- 1 cup roasted peanuts
- 4 sweet potatoes, peeled and
diced
- 2 (15 1/2 ounce) cans
chickpeas, drained
- 4 cups vegetable broth
- 1 (28 ounce) can diced
tomatoes, with juice
- 1 tablespoon ground cumin
- 1/2 teaspoon ground black
pepper
- 1/4 teaspoon salt
Instructions:
- In a small saucepan on a
stovetop, sauté the onion in peanut oil until soft and translucent.
- Drain and set aside.
- Process peanuts until smooth
in a food processor.
- Combine onion, peanut puree,
and remaining ingredients in a 3 quart slow cooker, and mix well.
- Cover and cook on LOW for 6 -
8 hours.
