Sweet Potato Bean Soup
"Dengu"

makes 8 (1 1/2 cup) servings

Ingredients:

Instructions:

  1. In a small saucepan on a stovetop, sauté the onion in peanut oil until soft and translucent.
  2. Drain and set aside.
  3. Process peanuts until smooth in a food processor.
  4. Combine onion, peanut puree, and remaining ingredients in a 3 quart slow cooker, and mix well.
  5. Cover and cook on LOW for 6 - 8 hours.
