Cappuccino Chip Muffins
makes 12 muffins
Ingredients:
- 2 cups all-purpose flour
- 3/4 cups granulated sugar
- 2 1/2 teaspoons baking powder
- 2 teaspoons instant espresso
coffee powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 3/4 cup semisweet chocolate
mini-chips
- 1 cup whole or 2% milk
- 1/2 cup butter, melted and
cooled
- 1 large egg, slightly beaten
- 1 teaspoon pure vanilla
extract
Instructions:
- Prepare muffin tins by
greasing each cup or placing a paper muffin liner in each cup; preheat
oven to 375 degrees
- In a medium-sized bowl,
combine flour, sugar, baking powder, instant coffee, salt, cinnamon, and
chocolate chips; mix well
- In a small bowl, combine
milk, butter, egg, vanilla; mix well
- Pour liquid ingredients into
dry ingredients; combine with as few strokes as possible, just until dry
ingredients are moistened
- Fill prepared muffin cups 2/3
full
- Bake muffins for 15 - 20
minutes; cool in muffin tins for 5 minutes; remove to complete cooling on
wire rack
- Serve warm or cool
completely. Store in an airtight container at room temperature. These
freeze well.
