Chocolate Brownie Muffins
makes 12 muffins
Ingredients:
- 1 cup all-purpose flour
- 1 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1 cup butter, melted and
cooled
- 4 ounces semi-sweet baking
chocolate, melted and cooled
- 4 large eggs, lightly beaten
- 1 teaspoon pure vanilla
extract
- 1 cup chocolate mini-morsels
Instructions:
- Prepare muffin tins by
greasing each cup or by lining each cup with paper muffin liners.
- Preheat oven to 400 degrees.
- In a medium bowl, combine dry
ingredients and mix well.
- In another medium bowl,
combine butter, chocolate, eggs, vanilla, and chocolate morsels and mix
well.
- Add liquid ingredients to dry
ingredients and mix with just a few strokes.
- Spoon into prepared muffin
cups, filling each about 2/3 full.
- Bake in preheated 400 degree
oven for about 20 minutes.
- Cool in muffin tins for about
5 minutes and then remove to wire rack to complete cooling.
