Lemon Blueberry Muffins
makes 12 muffins
Ingredients:
- 1 3/4 cup all-purpose flour
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 8 ounces lemon yogurt
- 6 tablespoons butter, melted
and cooled
- 1 large egg
- 1 tablespoon lemon juice
- 1 tablespoon grated lemon
peel
- 1 cup fresh blueberries
Instructions:
- Prepare a muffin tin by
greasing each cup or lining each cup with a paper muffin liner.
- Preheat oven to 400 degrees.
- In a medium sized bowl,
combine all dry ingredients and mix well.
- In a small bowl, combine
remaining ingredients except the blueberries and mix well.
- Add liquid ingredients to dry
ingredients, mixing quickly with only a few strokes.
- Fold in the blueberries with
only 4 or 5 strokes.
- Spoon into prepared muffin
tins and bake at 400 degrees for 17 - 20 minutes.
- Cool in pan for 2 or 3
minutes and then move to wire rack to complete cooling.
