Pecan Pear Muffins
makes 12 muffins
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup butter, melted and
cooled
- 1 large egg
- 1 cup 2% milk
- 1 lemon, zest of
- 2 large pears, peeled, cored,
and diced
- 3/4 cup chopped pecans
Instructions:
- Prepare muffins tins by
greasing each cup or by lining each cup with a paper muffin liner.
- Preheat oven to 425 degrees.
- In a medium bowl, combine all
dry ingredients and mix well.
- In a small bowl, combine
butter, egg, and milk and mix well.
- Add liquid ingredients to dry
ingredients and mix with only a few strokes.
- Fold in lemon zest, pears,
and pecans with only 4 or 5 strokes.
- Spoon into prepared muffin
tin, filling each cup 2/3 full and bake at 425 for 20 - 25 minutes.
- The tops should be lightly
browned.
- Remove from muffin tins
immediately.
- These are wonderful served
warm, but may be tightly wrapped in plastic wrap after they've cooled and
eaten the next day.
