Pecan Pear Muffins

makes 12 muffins

Ingredients:

Instructions:

  1. Prepare muffins tins by greasing each cup or by lining each cup with a paper muffin liner.
  2. Preheat oven to 425 degrees.
  3. In a medium bowl, combine all dry ingredients and mix well.
  4. In a small bowl, combine butter, egg, and milk and mix well.
  5. Add liquid ingredients to dry ingredients and mix with only a few strokes.
  6. Fold in lemon zest, pears, and pecans with only 4 or 5 strokes.
  7. Spoon into prepared muffin tin, filling each cup 2/3 full and bake at 425 for 20 - 25 minutes.
  8. The tops should be lightly browned.
  9. Remove from muffin tins immediately.
  10. These are wonderful served warm, but may be tightly wrapped in plastic wrap after they've cooled and eaten the next day.
